Any advice from vegetarian athletes out there?

I am a cyclist. I compete throughout the year in high endurance century rides and stage races (very looooong rides!). I’ve dropped eating red meats awhile back, and really want to make the commitment to become a vegetarian. However, my efforts have been thwarted by my coach who tells me “you can’t compete if you don’t eat meat.”

Yes… it’s a very ignorant statement. So, I am wondering if there are any books / advice out there geared specifically for endurance athletes nutrition in a vegetarian lifestyle.
